the good earth at cafe` melba

this is what i found in my bountiful basket


i also grew a few things on my own


and decided to look through grandma j's
cookbook and find something to use it all in...

i thought this looked interesting...



mexican corn bread

2 cups cornmeal
1 teaspoon baking soda
2 cups buttermilk
1/3 cup bacon drippings

(since i only had pre-cooked bacon and no stash of
bacon drippings:), i used about 1 teaspoon of actual drippings and the rest canola oil)

1 teaspoon salt
2 eggs
1 can cream style corn
(i used leftover corn on the cob)
1 pound cheddar cheese
1 jalapeño pepper
1 green pepper chopped
1 small onion chopped

not being a huge fan of green pepper,
i used about half of the jalapeño 
and about 1/3 cup of fresh salsa
instead...

bake in an oblong pan at 350 degrees

there was no time on the original recipe
so i baked it for about 30-35 minutes.
you might just need to watch it and when
the bread pulls away from the sides it should be about done.

it was so yummy...



grandpa dave absolutely loved it...



it would be so good with chili or a 
mexican salad...
